This recipe comes to us from head chef Holger Grätz who is based in the city of Lübeck. Ingredients for four persons: 1 kg Corned Beef 500 g Red Beets 500 g sour pickles 1 peeled Onion garlic cloves, bay leaves, salt, pepper, sugar 1 tbsp. Mustard 1 tbsp. smoked salt 4 Eggs 2 young Herrings 1 Tomato Pumpkin cubes 1 kg Potatoes Preparation: Cover corned beef with water. Add the onion, cloves, bay leaves, salt and pepper, and allow to cook for three hours. When meat is cooked, chop very finely. Peel and chop red beets. Cook with vinegar, salt and sugar until they are done. Put beef, red beats and sour pickles in meat grinder. For flavor, add 1 tablespoon mustard, 1 tablespoon sugar, and 1 tablespoon smoked salt Peel, cook and mash the potatoes. Arrange on a large plate. Served with some young herring and a few slices of pickles and a few slices of red beet along the edge of the plate. Put a fried egg on top of each serving to crown the dish. Menu: 1 herring filet, red beets, pickle slices, pumpkin cubes, tomato wedges
