On the waterfront, Hong Kong-style

Hong Kong has got a new taste for alfresco dining with the Water Margin in Discovery Bay, Lantau Island -- and it's a laboratory for branding niche dining establishments that plan to open in other countries. Resort-style Discovery Bay has been host to an increasing number of tourists and trade convention attendees, and has been open since February after a year-long re-landscaping development by Hong Kong Resorts, Discovery Bay's owner. Andy Smith, Manager of Zaks restaurant, says marketing is working well, making the retail brand increasingly exportable overseas. Gary Stokes, Director of Hemingway's restaurant, says he's also planning to take his restaurant's brand international.
