There is only one seating at 7:30pm and they are only open three nights a week. The rest of the week, "we are sourcing our ingredients from several specialty purveyors and messing around in the kitchen coming up with dishes. We like to have everything planned out and tasted by Tuesday for dinner on Thursday. People have no idea how much it takes just to make even a few ten course meals perfectly," the Chef says.
